Makes 12 pancakes


You’ve heard of green beer for St. Patrick’s Day, but have you ever tried green pancakes?!
This recipe for Savory Spinach Pancakes is the perfect way to sneak some leafy greens into a tasty meal.
As a bonus, it is also a festive St. Patty’s Day breakfast treat… and maybe something to fill you up before filling up on green beer 😉 

Ingredients


  • Flour
  • Baby spinach
  • Milk
  • 1 egg
  • 1 tsp baking powder
  • Butter, melted
  • ½ tsp ground cumin
  • Salt and pepper to taste
  • For garnishing: Crème fraîche and lemon zest

Instructions


Step 1. Wash and dry the spinach leaves.


Step 2. Place all the ingredients in a blender and blend until a smooth batter is obtained. Pour the batter into a bowl and let it rest for 1 hour.


Step 3. Heat a MINERAL B Egg/Pancake pan and when hot, add a bit of oil or butter and pour in a ladleful of batter. Turn the pancake over when bubbles appear and cook for 15-20 seconds on the other side.


Step 4. Serve the pancakes with a teaspoon of crème fraîche and sprinkle with lemon zest.
