CARBON STEEL SEASONING INSTRUCTIONs

After being properly seasoned, Carbon Steel pans become naturally nonstick - and the more you use it, the better it gets!

While there are several different methods to season carbon steel, you'll find our recommended method below.

Tips and recommendations:

  • Use a neutral tasting oil with a high smoke point. We recommend: grapeseed oil, avocado oil, canola oil, peanut oil, or sunflower oil
  • When draining or discarding any excess oil, do not pour it down the sink drain! 
  • If using a glass top or electric stove top, be sure to match the size of the pan to the size of the burner and heat the pan gradually to avoid potential warping
 

Instructions: Stove top seasoning 


Step 1:

Wash your pan in hot water to remove the beeswax coating - it is okay if it doesn't all come off, as the beeswax can help in the seasoning process. Dry the pan.


Step 2:

Place your pan on the stove over medium-high heat and pour in a very thin layer of oil. Gently rotate your pan to distribute oil evenly across the entire cooking surface.


Step 3:

Continue to heat until the oil reaches it's smoke point, approximately 10 minutes (You should see the pan turning brownish color). Turn off heat and let it cool down.


Step 4: 

Carefully drain the leftover oil and wipe the pan down with a paper towel. 


Step 5:

Place the pan back on the stove over medium heat and heat for 2 minutes to dry any remaining moisture. Turn off heat and let it cool.


You can repeat this process 1-3 times and then start cooking with it! The seasoning will gradually build up as you cook with it.

*Not all de Buyer carbon steel pans are completely oven safe - we only recommend oven seasoning for carbon steel pans with cast stainless steel handles


Step 1:

Step 2:

Preheat your oven to 475F 


Step 3:

Using a paper towel, rub a thin layer of oil all over the inside AND outside of the pan.


Step 4: 

Place the pan in the oven upside down. Bake for 1 hour (the pan should become very dark) 


Step 5:

Turn the oven off and let the pan cool for a bit before removing it (it will be extremely hot!!) 


You can repeat this process 1-3 times and then start cooking with it! The seasoning will gradually build up as you cook with it.
