Ingredients


  • 1/2 cup unsalted butter
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon zest
  • 1/2 tablespoon poppy seeds
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • optional: powdered sugar or glaze for sprinkling on top

Baking Instruction


Step 1. Melt the butter and set aside to slightly cool as you prepare the rest of the batter.

Step 2. Using a mixer, beat the eggs and sugar together on high speed for at least 8 minutes.

Step 3. Add in the lemon zest, poppy seeds, and vanilla extract until combined.

Step 4. By hand, whisk the flour, baking powder, and salt together in a small bowl.

Step 5. Using a spatula or wooden spoon, gently fold into egg mixture.

Step 6. Stir the batter into the melted butter. The batter will be thick, silky, and shiny.

Step 7. Cover the batter and chill in the refrigerator for 30 minutes.

Step 8. Preheat the oven to 350°F.

Step 9. Melt 2 Tablespoons butter and lightly brush the pan with melted butter. The batter will be quite airy and spongey after resting.

Step 10. Spoon 1 generous Tablespoon of batter into the center of each scalloped well. No need to spread it to the edges. Just plop it in the center.

Step 11. Bake for 10-12 minutes. The madeleines are done when the tops spring back after lightly pressed with your finger.

Step 12. Invert the pan onto the counter. Transfer the warm madeleines to a wire rack to lightly cool.

Dust with confectioners’ sugar or drizzle with glaze upon cooling.
