BEEF TATAKI with Sautéed Vegetables
Serves 4 people
Try out this recipe for Beef Tataki with sautéed vegetables and impress your friends and family this weekend.
Beef Tataki
Ingredients
- 10-12 oz beef steak
- ½ tbsp cooking sake
- cup soy sauce
- 1 garlic clove
- 2 tbsp fresh ginger
- ½ lime
Sautéed Vegetables
Ingredients
- ¾ cup French peas
- ¾ cup fava beans
- ¾ cup snow peas
- ¼ bunch of curly kale
- ½ head Romanesco broccoli
- ½ head broccoli
- 1 mini red pepper
- Salt and pepper (to taste)
- Sesame or olive oil
*Vegetables can be adapted according to the season and your preferences
Before Cooking*Prepare at least 2 hours before or the day before
Step 1. Peel and mince the garlic.
Step 2. Grate the ginger.
Step 3. Grate the lemon zest and squeeze the juice.
Step 4. Brown the pieces of beef in a hot pan, with a little oil, for 3 minutes on each side. Set aside on a dish.
Step 5. Away from the heat, deglaze the pan with the sake and soy sauce. Add the lemon juice, ginger, and garlic.
Step 6. Pour it over meat. Set it aside in the refrigerator.
Before Cooking
Step 1. Remove the leaves from the stems and chop the kale.
Step 2. Remove the stalks from the romanesco.
Step 3. Cook the French peas, fava beans, snow peas, kale, Romanesco, and broccoli a l’anglaise* then cut the mini pepper into thin slices and set aside.
* Cooking a l’Anglaise : cook the vegetables separately in plenty of boiling, salted water, then cool quickly in iced water.
Before Serving
Step 1. Warm a little sesame oil, and reheat the vegetables and pepper.
Step 2. Drain the meat and cut it into thin slices.
Step 3. Reduce the marinade by half over a low heat and serve with the Tataki.
