FAQ
-
Are de Buyer Blue Steel pans made in France?
Yes, all our Blue Steel pans are made in France, in our own factory located in the beautiful region of Vosges. The de Buyer factory has been in operation since 1830, and mixes tradition and state-of-the art technology.
Does my Blue Steel pan come seasoned?
Your Blue Steel pan is not seasoned when you buy it. Seasoning is part of the carbon and blue steel experience, and we let you enjoy it! Follow our instructions for a hassle-free seasoning
What is the best oil to season a blue steel pan?
There are many different oils to use and ways to season a pan, but for optimum results we recommend using an oil with a high smoking point such as grapeseed, peanut, canola, sunflower, or avocado oil.
How can I clean my pan? Can I use soap?
Deglaze the pan when it’s still hot to remove the built-in bits and pieces. Avoid using soap. Hand wash only, do not put your carbon steel pan in the dishwasher.
When and how do I re-season my pan?
You may need to re-season your pan if you scrap the initial seasoning by using harsh detergent when washing it and/or by cooking acidic food in the pan. Re-seasoning a pan is virtually the same process as seasoning it to begin with. Depending on the shape that your pan is in, you might need to deep clean it before trying to re-season. You can then follow our seasoning instructions.
Do blue steel pans rust?
Unfortunately, due to the laws of nature, rust can occasionally appear on your carbon and blue steel pans. To prevent rusting, wipe your pan down with a small amount of oil and store in a dry place. Limit acid use and build a strong patina on your pan. If rust does build, we recommend using a rust cleaner and a non-abrasive scrub brush to remove it, and then clean it and rebuild your patina.
Can my Blue Steel pan go in the oven?
Only the Blue Steel pans that feature stainless steel handles are considered oven-safe. All our other Blue Steel fry pans can resist up to 10 minutes at 400F.
Can my Blue Steel pan be used on a grill?
Yes! They actually are a great choice to cook on a BBQ and even open fire.
Can I use a lid on my Blue Steel pan?
We don’t recommend using lids with either carbon steel or bleu steel pans, the lid will steam and give the food a metallic taste.
How does the handle sustain heat?
When used on the stove, the Blue Steel ‘French handle’ is conceived to stay cool. In addition, its arch and its length allow you to keep your hand away from the heat. If you want to take extra precautions, you can use a de Buyer sleeve.
Why is my pan convex?
The pan is slightly convex to make sure the pan is not spinning on a flat surface.
How can I avoid the pan from warping on induction or glass burner?
Make sure the cooking surface is matching the size of the eye/ring or coil of the burner. Raise the temperature gradually.
What is the difference between Alchimy and Affinity, aren’t they both stainless steel?
Yes, both the Alchimy and Affinity lines are stainless steel cookware, but there are 2 main differences between the two. First, they are aesthetically different with Alchimy featuring a unique brushed exterior, while Affinity features the classic polished stainless steel exterior. The second (and biggest) difference is the construction. The Alchimy line features a 3-ply construction of 18/10 stainless steel, a heat conductive aluminum middle layer, and a durable and induction-compatible exterior, while the Affinity collections features a 5-ply construction made up of 3 layers of conductive aluminum sandwiched 2 layers of high-quality stainless steel, also induction-compatible.
How does multi-layer differ from an aluminum encapsulated base?
Stainless steel cookware with an aluminum encapsulated base conducts heat only throughout the bottom base of the utensil. With the Alchimy and Affinity collections, the multi-layer technology extend throughout the base as well as up the sides of the utensil, allowing for better heat conductivity and circulation, cutting down your cooking times and making your time in the kitchen even more efficient.
How do I keep my cookware looking clean and like-new
Cleaning your stainless steel cookware is easy – to start, our Alchimy and Affinity lines are dishwasher safe and of course can also be handwashed with dish soap and hot water. To remove any stuck or burnt-on food, you can soak the utensil in hot, soapy water and scrub it off with a kitchen sponge. For stubborn messes, you can boil some water and scrape off any stuck-on bits.
To keep your Alchimy and Affinity cookware looking like-new you can use a non-abrasive cleaner, like Bon Ami or Bar Keepers Friend for stain removal and keeping your cookware shiny. To restore the shine, you can also rub it gently with some baking soda and water!Does stainless steel cookware have nonstick properties?
Depending on what you are cooking, food may stick to your stainless steel cookware if the temperature is either too hot or too cold, but when used correctly, stainless steel cookware will be your favorite in the kitchen. It might take some trial and error to figure out what works with your cooking style, but a good tip is to always pre-heat your pan.
