  • About this product

    • Step up your game when cooking Asian cuisine with the 12.5" Blue Carbon Steel Access Wok. Part of the brand new and exclusive de Buyer Blue Carbon Steel Access Collection, this 12.5" Wok is significantly lighter than cast iron; thinner than Mineral B and Mineral B Pro, it has the same properties in terms of heat responsiveness and becomes naturally non-stick after seasoning. The carbon steel body is made to retain heat, great for steaming and deep-frying all types of foods including a scrumptious stir-fry, fried rice, chow mein, and more.
  • Description

    • This pan is forged of Carbon Steel that is treated for protection against oxidation, which gives it its blue hue. Carbon steel is a natural and nontoxic material, as it does not use any chemicals or synthetic coating. It becomes naturally nonstick after seasoning and everyday use. Thinner than its equivalent in the Mineral B and Mineral B Pro Collections, the Blue Carbon Steel Access Wok is lighter yet offers the same cooking properties. Complete with a flat bottom, this wok is ideal for steaming, stir-frying, and more, this pan will become your go to for everyday indoor and outdoor cooking. Thanks to its traditional French handle, which is also oven safe, your hand stays away from the heat when cooking on the stove.

  • FAQ

    • What makes these pans blue?

This pan is forged of Carbon Steel that is treated for protection against oxidation, which gives it its blue hue. Carbon steel is a natural and nontoxic material, as it does not use any chemicals or synthetic coating. It becomes naturally nonstick after seasoning and everyday use.

What is the difference between Blue Carbon Steel Access and the Mineral B collections?

This collection is thinner than its equivalent in the Mineral B and Mineral B Pro Collections, the Blue Carbon Steel Access Fry Pan is lighter yet offers the same cooking properties.

Can my Blue Carbon Steel Access pan go in the oven?

Yes, these are all oven-safe. They are ideal for indoor and outdoor cooking and can withstand high heat temperatures.

How can I clean my pan? Can I use soap?

Deglaze the pan when it’s still hot to remove the built-in bits and pieces. Avoid using soap. Hand wash only, do not put your carbon steel pan in the dishwasher.

What is the best oil to season a carbon steel pan?

There are many different oils to use and ways to season a pan, but for optimum results, we recommend using an oil with a high smoking point such as grapeseed, peanut, canola, sunflower, or avocado oil.

When and how do I re-season my pan?

You may need to re-season your pan if you scrap the initial seasoning by using harsh detergent when washing it and/or by cooking acidic food in the pan. Re-seasoning a pan is virtually the same process as seasoning it, to begin with. Depending on the shape that your pan is in, you might need to deep clean it before trying to re-season it. You can then follow our seasoning instructions.

      Do carbon steel pans rust?

Unfortunately, due to the laws of nature, rust can occasionally appear on your carbon steel pans. To prevent rusting, wipe your pan down with a small amount of oil and store in a dry place. Limit acid use and build a strong patina on your pan. If rust does build, we recommend using a rust cleaner and a non-abrasive scrub brush to remove it, and then clean it and rebuild your patina.

  • Use & Care

    • Wash before first initial seasoning. Handwash only, avoid harsh soaps and materials that will strip the seasoning.
  • Shipping & Returns
