      MADE IN FRANCE

    • Are de Buyer Blue Steel pans made in France?

Yes, all our Blue Steel pans are made in France, in our own factory located in the beautiful region of Vosges. The de Buyer factory has been in operation since 1830, and mixes tradition and state-of-the art technology.

Does my Blue Steel pan come seasoned?

Your Blue Steel pan is not seasoned when you buy it. Seasoning is part of the carbon and blue steel experience, and we let you enjoy it! Follow our instructions for a hassle-free seasoning

What is the best oil to season a blue steel pan?

There are many different oils to use and ways to season a pan, but for optimum results we recommend using an oil with a high smoking point such as grapeseed, peanut, canola, sunflower, or avocado oil.

How can I clean my pan? Can I use soap?

Deglaze the pan when it’s still hot to remove the built-in bits and pieces. Avoid using soap. Hand wash only, do not put your carbon steel pan in the dishwasher.

When and how do I re-season my pan?

You may need to re-season your pan if you scrap the initial seasoning by using harsh detergent when washing it and/or by cooking acidic food in the pan. Re-seasoning a pan is virtually the same process as seasoning it to begin with. Depending on the shape that your pan is in, you might need to deep clean it before trying to re-season. You can then follow our seasoning instructions.

      Do blue steel pans rust?

Unfortunately, due to the laws of nature, rust can occasionally appear on your carbon and blue steel pans. To prevent rusting, wipe your pan down with a small amount of oil and store in a dry place. Limit acid use and build a strong patina on your pan. If rust does build, we recommend using a rust cleaner and a non-abrasive scrub brush to remove it, and then clean it and rebuild your patina.

Can my Blue Steel pan go in the oven?

Only the Blue Steel pans that feature stainless steel handles are considered oven-safe. All our other Blue Steel fry pans can resist up to 10 minutes at 400F.

Can my Blue Steel pan be used on a grill?

Yes! They actually are a great choice to cook on a BBQ and even open fire.

Can I use a lid on my Blue Steel pan?

We don’t recommend using lids with either carbon steel or bleu steel pans, the lid will steam and give the food a metallic taste.

How does the handle sustain heat?

When used on the stove, the Blue Steel ‘French handle’ is conceived to stay cool. In addition, its arch and its length allow you to keep your hand away from the heat. If you want to take extra precautions, you can use a de Buyer sleeve.

      Why is my pan convex?

The pan is slightly convex to make sure the pan is not spinning on a flat surface.

How can I avoid the pan from warping on induction or glass burner?

Make sure the cooking surface is matching the size of the eye/ring or coil of the burner. Raise the temperature gradually.
