The de Buyer guarantee
QUALITY
Since 1830, every de Buyer utensil has been conceived and designed in France following the most stringent quality requirements. The majority of our products, and specifically our cookware, are engineered and manufactured in our factory in France. The few exceptions are products, such as some silicone and bakeware utensils, that use manufacturing processes that cannot be sourced in France. Such partners, wherever they are in the world, are always selected according to our high standards of quality and integrity.
We believe in producing and offering our customers the
highest quality products across all of our product lines, following responsible manufacturing processes. Our commitment to Corporate Social Responsibility has been recognized as Exemplary by AFNOR, and we strongly
believe in integrating social and environmental practices into every aspect of creating high quality cookware and bakeware.
PASSION
From the Chefs we partner with to the individuals working at all levels of our company, everyone involved in making a de Buyer product is inhabited by the same passion: allowing passionate cooks and bakers like you to thrive in the kitchen.
RESPONSIBILITY
The "Corporate Social Responsibility” (CSR) commitment label that we received in 2018 is the recognition of our efforts in fields like environmental protection and workplace safety and inclusivity, whether internally or among our partners. de Buyer is the first and only French company in the culinary industry to receive this label.

FAQ
-
Are de Buyer Mineral B pans made in France?
Yes, all our Mineral B pans are made in France, in our own factory located in the beautiful region of Vosges. The de Buyer factory has been in operation since 1830, and mixes tradition and state-of-the art technology.
Does my Mineral B come seasoned?
Your Mineral B comes with a beeswax finish to protect it against oxidation, but it is not seasoned when you buy it. Seasoning is part of the carbon steel experience, and we let you enjoy it! Follow our instructions for a hassle-free seasoning.
What is the best oil to season a carbon steel pan?
There are many different oils to use and ways to season a pan, but for optimum results we recommend using an oil with a high smoking point such as grapeseed, peanut, canola, sunflower, or avocado oil.
How can I clean my pan? Can I use soap?
Deglaze the pan when it’s still hot to remove the built-in bits and pieces. Avoid using soap. Hand wash only, do not put your carbon steel pan in the dishwasher.
When and how do I re-season my pan?
You may need to re-season your pan if you scrap the initial seasoning by using harsh detergent when washing it and/or by cooking acidic food in the pan. Re-seasoning a pan is virtually the same process as seasoning it to begin with. Depending on the shape that your pan is in, you might need to deep clean it before trying to re-season. You can then follow our seasoning instructions.
Do carbon steel pans rust?
Unfortunately, due to the laws of nature, rust can occasionally appear on your carbon steel pans. To prevent rusting, wipe your pan down with a small amount of oil and store in a dry place. Limit acid use and build a strong patina on your pan. If rust does build, we recommend using a rust cleaner and a non-abrasive scrub brush to remove it, and then clean it and rebuild your patina.
Can my Mineral B pan go in the oven?
Only the Mineral B pans that feature a cast stainless steel handle are considered oven-safe: Mineral B PRO Fry Pan, Mineral B PRO Country Fry Pan, Mineral B Country Fry Pan with 2 handles, Mineral B Paella Pan, Mineral B Griddle, Mineral B Oval Roasting Pan. All our Mineral B fry pans can resist up to 10 minutes at 400F.
Can I use a lid on my Mineral B pan?
We don’t recommend using lids with Mineral B Pans, the lid will steam and give the food a metallic taste.
How does the handle sustain heat?
When used on the stove, the Mineral B ‘French handle’ is conceived to stay cool. In addition, its arch and its length allow you to keep your hand away from the heat. If you want to take extra precautions, you can use a de Buyer sleeve.
Why is my pan convex?
The pan is slightly convex to make sure the pan is not spinning on a flat surface. How can I avoid the pan from warping on induction or glass burner? Make sure the cooking surface is matching the size of the eye/ring or coil of the burner. Raise the temperature gradually.
Are de Buyer CHOC pans made in France?
Yes, all our CHOC pans are made in France, in our own factory located in the beautiful region of Vosges. The de Buyer factory has been in operation since 1830, and mixes tradition and state-of-the art technology.
Are there any chemicals in the de Buyer CHOC line?
Our CHOC pans are compliant with the US regulation and are both PFOA and PFOS-free. They are made of high quality, food-grade PTFE. We use the latest generation of PTFE coating to get the highest quality and durability on the market.
What makes the de Buyer CHOC different from other nonstick pans?
Our CHOC line uses a high-quality nonstick coating made of 5 layers for superior resistance against scratches and wear and tear. It resists higher temperature than regular nonstick frypans. Most nonstick pans on the market are much thinner, hence more fragile. Our CHOC Intense is coated on both the inside and the outside of the pan, for a safe use in the dishwasher (although we always recommend washing your CHOC pans by hand).
Can I use the CHOC with any cooking surface?
The CHOC Induction and CHOC Intense can be used with all cooking surfaces including induction. The CHOC line is not to be used with induction stovetops.
Do the colored handles have any use?
This line of CHOC pans with the colored handles was initially developed for restaurant chefs, following the HACCP regulation: the red handle is to cook meat, the blue handle pan is for fish, and the yellow is for vegetables. The color coded handles are also much appreciated by people with allergies, since they can keep their food separate.
Is it safe to use high temperatures to cook in a nonstick pan?
Aluminum nonstick pans such as our CHOC heat evenly and are designed to simmer, reheat or re-cook food, so it's not recommended to cook at full power on the stove. In addition, cooking at moderate temperatures helps preserving the non-stick capabilities of the coating.
How do I clean my CHOC pan without damaging the coating?
After cooking, allow the non-stick pan to soak to remove any residue. Then, clean by hand with dish soap and a soft sponge. Let dry or wipe with a kitchen towel. Avoid abrasive sponges and powders which can damage the coating. Dishwashing is not recommended. Handwash is highly recommended to preserve the integrity of your coating.
What type of utensils should I use with my CHOC nonstick pan?
The use of metal or sharp-edged utensils is to be avoided because they damage the non-stick coating. We recommend using flexible or semi-rigid spatulas with rounded corners and made of synthetic material, or you can safely use wooden utensils.
Can my CHOC nonstick pan go in the oven?
Our CHOC and CHOC Intense can be placed in the oven for up to 10 minutes at 390F.
What should I do to maintain optimal nonstick longer?
Here are a few tips to make your CHOC (and any nonstick pan) last longer: do not overheat, do not heat when empty, avoid thermal shock by gradually increasing the heat, and avoid heating at full power without warming it up first, avoid using the dishwasher or an abrasive sponge, use only flexible or wooden utensils.
