Treat your mom to something sweet this weekend - Try out this recipe for stuffed French Toast and spoil her with breakfast in bed. And don't forget to do the dishes too!

Ingredients


For the filling
  • 1 package (8oz) cream cheese, softened
  • ½ c powdered sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

For the French Toast
  • 8 slices of brioche (or 4 croissants)
  • 3 eggs
  • ¾ cup of milk
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

Toppings
  • Strawberries or other fresh berries
  • Whipped cream
  • Maple syrup
  • Sliced almonds

Instructions


Step 1. To make the cream cheese filling: Combine softened cream cheese, powdered sugar, lemon juice, and vanilla extract in a medium mixing bowl, use a whisk or mixer to combine until it’s reached a smooth consistency.

Step 2. In a larger mixing bowl, combine the eggs, milk, cinnamon, and vanilla and whisk until well combined to make the egg custard. Set aside.

Step 3. Take a slice of brioche bread, and gently squish it down in the center. Fill the center with the cream cheese filling and place another slice on top. Press the edges of the slices together to lightly seal them. Dip the “stuffed” slices in the egg custard until both sides are fully coated and have absorbed some of the custard. Repeat with the rest of the bread.

Step 4. Heat some butter on a frying pan over medium heat. Place the dipped bread on the pan and toast on each side for about 3 minutes. Remove from heat, plate and top off with your preference of fresh berries, whipped cream, maple syrup, or sliced almonds (or all of the above!)

Step 5. Serve to Mom for some breakfast in bed – bon appetit!
