First, the knife is very sharp out of the box and has a well shaped blade. The knife’s handle is really what distinguishes the FK2 Paring Knife; it is well designed, comfortable and allows you to cut things more easily than one would expect for a relatively small knife. Although probably most useful in a bigger knife, the adjustable counterweights are a nice design touch that help customize the knife to your preference. My wife prefers it with a single weight, I have found that I prefer it with two.
The FK2 Paring Knife design definitely contrasts with our other knives of Japanese origin. The DeBuyer is heavier and can feel more secure in the hand, especially when applying strong pressure. We have found that the FK2 Paring Knife can easily cut into firm cheese whereas other similarly sized knives would always require more pressure and feel less secure in hand. Conversely, the weight does sometimes make it feel a little more clumsy when cutting delicate foods.
We have found two things that could be improved. The junction between the carbon fiber handle and the metal bolster has a small gap where water and food particles could accumulate over time. The handle also has seams at the top and the bottom which are a little rough to the touch and can get uncomfortable after long periods.
Overall, the FK2 Paring Knife is really versatile and has a quality feel. The blade has stayed extremely sharp and it has become our main paring knife. It is a knife that we would definitely bring with us on a trip if we needed something that can handle almost all food preparation when space is limited.

The balance of this knife is incredible! I am a gourmet chef and I have NEVER been so impressed with a paring knife! I didn’t know what to expect, and it’s DEFINITELY different in weight and looks to any knife I’ve tried. I’ve been desperate to find a good paring knife as well as stocking my kitchen with other knives and supplies. I’ve always used Wusthof because of the quality but they don’t make any I like anymore. Thank you SO much for letting me try this knife! I will be purchasing another one!

I received this product from de Buyer for my honest review. The knife is the sharpest knife I ever owned, out of the box is cuts through onions, lemons and meat while barely touching it. The knife is heavy and big, good think you can adjust the weight and remove a two rivets at the top. I would not use the knife to cut apples as the blade it too thick to get a clean cut. Overall an awesome knife that is getting a prime place on my counter

The FK2 Paring Knife is exceptional.
I am a knife snob. I have a relatively large collection of knives that I use regularly (yes, I use them all). I hone my knives every time I use one, and I sharpen then as soon as honing is no longer making it "slice a tomato smooth". That said, I am super happy with the FK2 Paring Knife.
Things I love:
1) It is made in France. I love my French cocottes and I love my French knives. French people know cooking/cookware. This is known.
2) It has a nice, heavy weight to it. It feels substantial in your hand.
3) The knife edge is super sharp! I work in a laboratory, cutting with scalpels. This knife, I kid you not, is almost as sharp as those scalpels. You could shave your legs with it, should you find yourself on a deserted Island with the FK2 and in need of cleaning yourself up. It could happen.
4) It is slightly longer than my other two paring knives. This makes it more versatile in what it can do. I feel like this could be a very good option for someone in a small living space/limited budget situation where many knives are not feasible.
I would list things I don't like, but I truly don't have any. I could whine about how the balance isn't "perfect" for my hand, but obviously, that would only be applicable to me, and so is not a valid point. This is a fantastic paring knife, and versatile enough to be used for much more than just paring.

I received this product for free from de Buyer in exchange for my honest review. This knife is well worth the price. It feels really good in the hand and is adjustable for perfect balancing for the user. I have used Wusthof exclusively for 20 years and this knife rates right there with them. I used this knife to chop, slice, mince, and peel fruits. It is a workhorse with all vegetables, requiring little pressure to cut even the hardest vegetables. I would recommend this knife and will be using it, and others I purchase, in my kitchen.

I liked this knife so much that I am going to buy the Chef’s knife and give that a try. This is the absolute best pairing knife I have ever used and is by far my favorite kitchen knife that I own. The weight and adjustable balance is my favorite feature of this knife. It feels great in my hand and I prefer to leave all of the balance weights installed. It’s perfect! My next favorite feature is the handle material. The carbon fiber is amazing. This knife is extremely sharp right out of the package which is also very well done. I have quite a few high quality pocket knives and this knife is equal to those in many ways especially the materials such as the blade steel and handle. Don’t hesitate to buy one of these pairing knives. You won’t regret it!

De Buyer FK2 Paring knife;
A wonderful addition in our kitchen, replacing a tried and true (but old-style) German paring knife of famous repute... This well thought out piece of fine cutlery has that great in-hand "feel", i.e., a perfect balance; from the weighted pommel and the indescribable feeling of the carbon fiber handle - they both serve to complement the blade which is special in two ways. I find the blade to be uncommonly sharp and its profile perfect. We did a side by side comparison preparing various vegetables using our older paring knife and the De Buyer paring knife which won hands down being perfectly suitable - now our go to paring knife. We want to see a boning knife and a bread knife offered in this same line along with a sharpener...!! Please bring these over to the North American market!
