Ingredients
1 can chickpeas
½ cup + 2 tbsp nut or seed butter (peanut, almond, sunflower)
1 Tbsp honey (maple syrup)
2 tsp vanilla
1 tsp salt
1/3 cup chocolate chips
1 bag mini pretzels
2 cups melting chocolates
Makes about 40 pretzel bites. Consume on the same day or pretzel will get a bit soggy.
Directions
Add chickpeas, nut butter, honey, vanilla and salt into into a food processor.
Combine until it forms into a ball
Transfer mixture to a bowl and fold in chocolate chips using a wooden spoon, set in fridge for 10 min.
Add water to Ban Marie and place over medium heat. Bring to a steam (about 3-4 minutes) and add melting chocolates into pot and reduce heat to low. Keep some water handy so refill the Ban Marie if it starts to get low.
On a parchment lined cookie sheet, pair up pretzels so you have a bottom and top for creating the cookie dough sandwich. Place a ½ tablespoon size ball on the bottom pretzel and sandwich with the top pretzel. Repeat until all cookie dough is used up. You should have around 40 sandwich bites
Once chocolate has melted, dip pretzel bite halfway into the chocolate and place back on cookie sheet to set. Repeat for all pretzel bites. Place in fridge for faster drying time
